During the recent Pressure Canning Workshop sponsored by the Lincoln County Extension Homemakers and conducted by Jane Newton, County Extension Agent-Family & Consumer Sciences, Margaret Tucker and Corey Branson measure headspace in their jars of product. Headspace is an important food safety issue when canning. Extension Homemaker member Helen Edwards served as an advisor assisting and educating workshop participants. #WhateverItTakes
